SIMPLE KALE SALAD | my go-to recipe




This simple kale salad is delicious, nutritious and easy to make. It’s a fresh, raw salad that my family has decided is, ”the BEST kale salad recipe’ they have ever had! So, needless to say, I make it a lot. It’s a simple combination of kale, extra virgin olive oil, Kosher salt, garlic and lemon. You can enjoy this salad as-is or add-in your favorite salad toppings to bulk it up.

I often prep the kale as part of my meal prep so I know that I have some dark leafy greens in the fridge, ready to go for the week. Simply wash the kale leaves, remove the stems, then roll up the leaves and slice into thin ribbons. Next, I run them through my salad spinner to remove and excess moisture and store them in an airtight container lined with a paper towel. They will last up to five days in the fridge this way.

SIMPLE KALE SALAD RECIPE
1 bunch of kale
1 tablespoon extra virgin olive oil
1/8th teaspoon kosher salt
1 clove crushed garlic
1 teaspoon lemon juice

Rinse kale under cold water. Remove stems, roll leaves, and slice into thin ribbons.

Place kale ribbons into a salad spinner to remove any excess water. This is important if you want your dressing to adhere to the kale leaves.

Transfer the kale to a large bowl and drizzle with olive oil, then add salt, garlic and lemon juice.

Gently massage all the ingredients into the kale using your hands. If the kale is very tender, you can simply toss with tongs (no massage required!).

Enjoy as-is or add your favorite salad toppings.

NOTES
Save your kale stems! Chop them into little bits and saute with some olive oil, garlic, salt and pepper until tender. They are delicious tossed into scrambled eggs or with your favorite whole grains.
